Teas included:

Genmaicha Tea: A delicious green tea roasted with brown rice gives an interesting combination of vegetal, grassy, and nutty flavours. This style of tea is traditionally from Japan, however, we work with a tea farm in the Victorian Alpine for a local Australian Genmaicha tea experience. 

Jasmine Pearl Tea: A high grade hand rolled jasmine pearl tea naturally infused with jasmine flowers. Unlike other synthetic jasmine pearl tea brands; this one comes from a boutique farm where real jasmine flowers naturally scent the green tea. Tea masters place freshly picked jasmine flowers over the green tea leaves overnight and as the jasmine flowers release their aroma the tea absorbs this floral characteristic. 

Moroccan Mint Tea: A blend of green tea blended with the freshness of peppermint and spearmint. A much loved classic that works well hot or iced served with fresh mint.

Please see the brewing guide below when making Green Teas as specific water temperatures and steep times are important to extract a balanced flavour. If your tea tastes bitter or astringent its because either the water was too hot for the leaves or because the tea leaves were left in for too long.

Genmaicha
1 tsp to 200mL cup
75°C degree water temperature
2 min steep (the same leaf can be infused twice)

Jasmine Pearl
1 tsp to 200mL cup
80°C degree water temperature
3 min steep (the same leaf can be used for 3 infusions)

Moroccan Mint
1 tsp to 200mL cup
90°C degree water temperature
3 min steep (the same leaf can be used for 2 infusions)

Moroccan Mint Iced Tea:
2 heaped teaspoons to 200mL cup
90° C, 4 min steep
Add sweetener (sugar, agave, or honey) to taste while warm (but not hot)
Allow to cool and serve over ice with fresh garnish (crushed fresh mint or a slice of lemon)

(If you do not have a temperature-controlled kettle let the water cool for 7-12 minutes after it has been boiled to reach 75/80°C . Repeat the process above for subsequent infusions. Continue adding 30 seconds to 1 minute for each time you re-steep the leaves to extract the most out of the green tea.)
