Steeped, this blend moves colour before it moves flavour — pale pink lifting off the hibiscus first, then deepening through rose to garnet, settling into a jewel-toned red. Nothing forces that shift. It happens because raspberry, elderberry, juniper and hibiscus are left together, undisturbed, for a few minutes.
The taste follows the same arc. Tart at the front, from the hibiscus. A rounder, almost wine-like depth underneath, from the elderberry. And a faint resinous note from the juniper berries that most people don't notice until it's pointed out. Calendula petals go in last, mostly for colour.

Made with New Zealand-grown freeze-dried raspberries, which hold their flavour through drying far better than air-dried fruit does — the reason this blend tastes distinctly of raspberry rather than approximately of it.
